It is so yummy🤗 Here are some reasons behind the lemon juice that I found interesting. Adding acid to jams such as fresh lemon juice is essential for two reasons: First, it makes for a more well-balanced jam, returning some of the acidity lost with adding sugar. Second, pectin needs acid to activate correctly or firm up. It really is the caviar of tomatoes 🍅 👩‍🍳🎉
