Mini Cookie Toppers for Smoothie Bowls

These cookies remain chewy and don’t get soggy!

Smoothie Tips
Use 1 cup of frozen fruit plus 1 banana, avocado, or mango for creaminess and 3 almond milk ice cubes with a splash of water and blend. Mix in 1 scoop of your favorite protein powder. Pour into a bowl and top with a dozen cookies.

Cookies
2 cups almond flour
1/2 teaspoon baking powder
1/3 cup total of honey & maple syrup
2 teaspoons vanilla extract

Place dry ingredients in a large ziplock bag and shake. Add liquids and squeeze the mixture until well incorporated. Snip the end and squeeze the dough into mini cookies. Bake at 350 degrees on a parchment-lined pan for 12 minutes.
